Cube steak comes from the top round or top sirloin, tenderized and flattened by pounding with a meat tenderizer. The name refers to the shape of the indentations left by that process called 'cubing' it. Perfect for chicken fried steak, a low cost family favorite. All of our cuts come from Montana ranch-raised, grass fed cows that are finished right here on the ranch on a mix of Central Montanapeas and barley.
